Peperonata

 

Garlic beans

 

  • 2 ONIONS, chopped
  • 2 TOMATOES, peeled and chopped
  • 3 RED SWEET PEPPERS, cut in strips
  • 1 TBSP CAPERS
  • HANDFUL BASIL LEAVES, cut
  • 1 TBSP BALSAMIC VINEGAR
  • OLIVE OIL
 
  • 500 GRAM FRENCH BEANS, cleaned
  • 2 CLOVES GARLIC, sliced
  • RIND OF 1 LEMON
  • 3 TBSP SOY SAUCE

Stir fry the onions three minutes in olive oil. Add the sweet peppers and fry 10 minutes more. Add the tomatoes, vinegar and pepper and salt to taste and simmer for 15 minutes. Finally add the capers and basil leaves.

Cook the beans 5 minutes. Stir fry the garlic 2 minutes, add the beans and the lemon rind and stir fry 4 minutes more. Add the soy sauce and heat thoroughly.
