Coquilles on cucumber

 

Club sandwich with rillettes

  • 12 SAINT JACOB'S MUSSELS
  • 1/4 CUCUMBER, thinly sliced (12 slices)
  • JUICE OF 1 LEMON
  • 1/4 ONION, chopped
  • 1 TBSP MINT, chopped
  • 1 TBSP GREEN CORIANDER, chopped
 
  • 12 SLICES OF BROWN BREAD
  • 4 TBSP CHUTNEY
  • 1 PEAR, peeled and sliced
  • HANDFUL CORN SALAD LEAVES
  • 250 GRAM RILLETTES

Mix the lemon juice with the coriander and mint and marinate the mussels 5 hours. Stir fry the onion for 3 minutes; dry the mussels and add them and fry 1-2 minutes on each side. Put a mussel on each cucumber slice and sprinkle with salt and freshly milled pepper to taste.

Toast the bread slices. Distribute first the corn salad and then the rillettes over 4 slices of bread, put 4 slices on top of those and spread the chutney on these. Put the pear slices on the chutney and cover with the remaining bread slices. Cut the bread diagonally.

Rillettes is a dish prepared from meat (often pork), in its own fat and then shredded. If you cannot find rillettes in your local shops, you can also use paté.
