Cheese puffs

 

Melon cocktail

  • 75 GRAM BUTTER
  • 100 GRAM FLOUR
  • 3 EGGS
  • 75 GRAM CHEESE, grated
 
  • 1 HONEYDEW MELON, cleaned and in large cubes
  • 2 TBSP OLIVE OIL
  • HANDFUL BASIL LEAVES, chopped
  • 75 GRAM SMOKED HAM, cubed

Add the butter to 200 gram water and bring to the boil. Simmer slowly until the butter has dissolved. Add all flour at once, while the pan is on low heat, and stir well, until the dough forms a ball. Turn off the heat. Allow the dough to cool down for 10 minutes, then add the eggs, one by one. Mix well until smooth. Stir in the cheese. Drop the dough with a spoon onto a baking sheet (makes about 16). Bake the puffs 20 minutes at 200 degrees Celsius.

Stir fry the ham 5 minutes and allow to cool down. Mix all ingredients and toss well; serve in glasses or glass bowls. Decorate with a basil leave.
