Cabbage salad with cranberries

 

Cucumber salad

 
  • 1/2 WHITE CABBAGE, shredded
  • 1 APPLE, peeled, cored and chopped
  • 50 GRAM DRIED CRANBERRIES
  • HANDFUL CHIVES, chopped
  • 3 TBSP APPLE VINEGAR
  • 3 TBSP OIL
  • 1 TBSP HONEY
 
  • 1 CUCUMBER, peeled and sliced
  • 50 GRAM COCONUT, grated
  • 100 GRAM BEAN SPROUTS
  • 1 TSP MUSTARD SEED
  • 1/2 LEMON, juice and rind
  • 2 GREEN PEPPERS, chopped
  • HANDFUL FRESH CORIANDER, cut
  • 10 CURRY LEAVES

Whisk for the dressing the vinegar with the oil, honey and pepper and salt together. Mix all ingredients (keep a few apple pieces and cranberries behind for decorating) and pour the dressing on top. Decorate with apple and cranberries.

This is a Ukrainian recipe. On the night between 6 and 7 July the Ukrainians celebrate Ivan Kupala which is Russian for John the Baptist. Stir fry the curry leaves, mustard seeds and green peppers for 3 minutes. Mix them with the other ingredients. Toss the salad before serving.
