Sauerkraut with banana

 

Dublin coddle

  • 600 GRAM MINCED BEEF
  • 3 BANANAS, sliced
  • 400 GRAM SAUERKRAUT
  • 750 GRAM POTATOES, cooked and pureed with
  • 1/2 CUP MILK
  • 1/2 TSP NUTMEG, grated
  • 4 TBSP BREADCRUMBS
  • 50 GRAM CHEESE, grated
 
  • 750 GRAM POTATOES, peeled and sliced
  • 3 ONIONS, sliced
  • 4 SAUSAGES
  • 100 GRAM BACON, sliced
  • 1 TBSP PARSLEY, chopped

Stir fry the minced beef for five minutes, add pepper and salt to taste and put it on the bottom of a greased oven dish. Put first the bananas, then the sauerkraut and finally the potato puree. Sprinkle with nutmeg and breadcrumbs and distribute the grated cheese on top. Bake 30 minutes in the oven at 200 degrees Celsius.

You can prepare mouth-watering dishes using sauerkraut, try for instance Mediterranean sauerkraut, bigos and sauerkraut soup.

Make layers of potatoes, onions, sausages and bacon and sprinkle each layer with a bit of salt and pepper and parsley. Pour 1 large cup of water on top and bring to the boil. Simmer on very low heat for 1 hour.
