Chocolate coulants

Iced apples

  • 100 GRAM SELF RAISING FLOUR
  • 100 GRAM CHOCOLATE
  • 1 CUP CREAM
  • 25 GRAM BUTTER
  • 5 EGGS
  • 4 TBSP SUGAR

  • 1 KG APPLES, peeled, cored and sliced thinly
  • 300 GRAM SUGAR

Melt the chocolate with the butter in the microwave. Beat the eggs with the sugar for a few minutes, and add the flour, the cream and chocolate. Stir well. Preheat the oven at 220 degrees Celsius and fill the baking tray with water. Distribute the chocolate mixture over 4 molds and put them with the bottom in the water in the baking tray in the oven for 5 minutes. The outside should be firm, the inside still fluid.

Bring 3/4 cup of water to the boil and dissolve the sugar; simmer for 10 minutes. Stack the apple slices layer after layer in a round pan. Pour the syrup on the apple. Bring this to the boil and simmer on very low heat for 2 hours. Allow the apples to cool down completely.

This is a Greek recipe. 17 November is Polytecnneio Day in Greece, because on that day in 1973 there was a student uprising in Athens against the military junta which was there since 1967. Click on culinary calendar for more links between cooking and worldwide history.
