Banana mandazi

 

Blueberry pancakes

  • 250 GRAM SELF RAISING FLOUR
  • 1 EGG
  • 1/2 CUP MILK
  • 2 BANANAS
  • 5 TBSP SUGAR
 
  • 250 GRAM BLUEBERRIES
  • 1 1/2 CUP BUTTERMILK
  • 4 TBSP SUGAR
  • 2 EGGS
  • 300 GRAM SELF RAISING FLOUR
  • MAPLE SYRUP

Put all the ingredients in a food processor and puree it into a smooth mixture. Put the mixture in the fridge for one hour. Heat oil in a deep frying pan and put heaps of the batter with a big spoon in the oil. Deep fry them 4 minutes, turn them halfway.

You can serve the mandazi on the 12th of January, Zanzibar Revolution Day. In 1964 Zanzibar was freed from the Sultan of Oman and became later part of Tanzania. Click on culinary calendar for more links between cooking and celebration.

Mix the buttermilk with the sugar, the eggs and the flour; add the blueberries, keep a few behind for decoration. Heat some butter in a frying pan on medium heat and make 4 heaps with a spoon. Bake them until they are almost dry on the top side, then turn them and bake until brown. Stack the pancakes, put some berries on top and drizzle with maple syrup. Repeat the process until the batter has finished.
