Crostini

Bruschetta

  • 2 GREEN PEPPERS, cut
  • 2 TOMATOES, cut
  • 4 TBSP BREAD CRUMBS
  • 4 TBSP OLIVE OIL
  • 2 TBSP CAPERS
  • 50 GRAM CHEESE, in very small cubes
  • 1 FRENCH BREAD, sliced

  • WHOLE WHEAT BREAD OR SOUR DOUGH BREAD, sliced
  • 1 TOMATO, in small cubes
  • 8 OLIVES, chopped
  • 1 CLOVE GARLIC, mashed
  • 5 TBSP OLIVE OIL
  • 1 TBSP ANCHOVIES PASTE or 4 ANCHOVIES, chopped
  • OREGANO

Mix the green peppers, the tomatoes, the capers, the bread crumbs, the cheese and two tablespoons olive oil. Put in an oven dish and bake at 200 degrees in the oven until brown (approx 10-15 minutes). In the mean time, toast the French bread and brush the top with the remaining olive oil. Spoon the pepper mixture on top and serve warm.

Toast the bread. In the meantime, mix the tomato with the olives, the oregano, the garlic, the anchovies and 1 tablespoon olive oil. Brush the top of the toasted bread with the remaining oil and spoon the tomato mixture on top.
