Lemon sauce

 

Sweet banana relish

 
  • 2 BANANAS, chopped
  • 6 TBSP BROWN SUGAR
  • 50 GRAM RAISINS
  • 1 LEMON, juice and rind
  • 50 GRAM ALMONDS, chopped
  • 1/2 TSP CINNAMON
  • 1/2 TSP NUTMEG

Mix the eggs with the sugar, the crème fraîche, the juice of 2 lemons and the rind of 1 lemon. Put in the microwave at 700 Watt, 30 seconds at the time, until the sauce thickens. Stir in between. You can also heat the sauce on a very low fire, stir well and be careful not to cook. Au bain marie gives a better result, but is more time consuming.

Mix all ingredients except the almonds. Add 100 gram water. Bring to the boil and simmer for 30 minutes. Add the almonds. Serve hot or cold.
Nice with vanilla ice-cream or chocolate ice-cream.
