Green mango and tuna salad

 

Radish and mango salad

  • 1 UNRIPE MANGO, peeled and cut in thin strips
  • 1/2 TSP SALT
  • 500 GRAM TUNA, grilled
  • BUNCH OF GREEN ONIONS, chopped
  • 100 GRAM BEAN SPROUTS
  • 1/4 CUP COCONUT MILK
  • 1 TBSP GREEN MANGO SAMBAL
 
  • 400 GRAM RADISH, in slices
  • 2 APPLES, cleaned and sliced
  • 1 MANGO, cleaned and cut
  • BUNCH OF GREEN ONIONS, chopped
  • 1/2 TSP HORSERADISH POWDER
  • 4 TBSP MAYONNAISE
  • 2 TBSP YOGURT
  • 1/2 BUNCH PARSLEY

Mix the sambal with the coconut milk. Sprinkle the mangoes with salt. Cut the tuna in cubes. Mix the mango, tuna, onions and bean sprouts and coconut dressing and toss before serving.

Put the mango, apple, radish and green onions in a large bowl. Mix, for the dressing, the mayonnaise, yogurt, horseradish and parsley. Pour the dressing over the vegetables and toss well.
