Chicken liver with apple Osso buco
  • 500 GRAM CHICKEN LIVERS
  • 75 GRAM BACON
  • 2 APPLES
  • 1 DECILITER WHITE WINE
  • 1 ONION
  • 1.5 KG VEAL SHANKS
  • 50 GRAM FLOUR
  • 2 ONIONS
  • 2 DL WHITE WINE
  • 4 TOMATOES
  • 2 CLOVES GARLIC
  • 2 DECILITER STOCK
  • ROSEMARY

Chop the onion, peel and cut the apples, cut the bacon. Fry the onion and the bacon for 5 minutes, add the chicken livers and fry 5 minutes more. Add wine and apples and cook for 10 minutes. Serve with mashed potatoes and tomato salad.

The meat should be cut in slices of 2 centimeters thick. Cover the meat with flour and fry both sides in hot oil until brown. Peel and chop the tomatoes. Chop the onions and the garlic. Fry the onions and the garlic, add the tomatoes and the white wine and cook for 10 minutes; add the stock and the rosemary. Put the meat in an oven dish and poor the tomato sauce on top. Cover with aluminum foil. Put in the oven at 180 degrees for two hours.

 

The original recipe was prepared without tomatoes. The word "osso buco" means literally "leg with a hole".
