Morisqueta tostada
(fried rice with prawn and sausage)

 

Beef and rice noodles

 
  • 400 GRAM RICE, cooked
  • 2 EGGS
  • 400 GRAM PRAWNS, peeled
  • 200 GRAM CHORIZO, in cubes
  • 1 ONION, chopped
  • 1 GREEN ONION, chopped
  • 4 TBSP SOY SAUCE
  • 2 CLOVES GARLIC, mashed
  • 1 CHILI PEPPER, chopped
 
  • 500 GRAM NOODLES
  • 4 TBSP SESAME OIL
  • 2 TBSP SOY SAUCE
  • 400 GRAM BEEF FILLET, cut in strips
  • PIECE OF GINGERROOT, chopped finely
  • 2 RED CHILI PEPPERS, chopped finely
  • 2 CLOVES GARLIC, chopped finely
  • 300 GRAM BROCCOLI, cut
  • 200 GRAM CARROTS, cut in julienne
  • 2 TBSP BROWN SUGAR

Fry the onion, the pepper and and the garlic 5 minutes in oil. Add the chorizo and fry 3 more minutes; add the prawns and fry 2 minutes. Now stir in the rice and stir fry 5 minutes. Stir in the soy sauce. In a separate pan, make scrambled eggs of the two eggs. Add them to the rice mixture. Put the rice mixture in a bowl and sprinkle with green onions.

This is a Filipino recipe. On 12 June 1898, the Philippines' Declaration of Independence was signed which signified the end to the colonial rule of Spain. Cook the noodles according to instructions on the package. Stir fry the beef for a few minutes in sesame oil. Take it out of the pan. Now stir fry the garlic, ginger root and pepper two minutes, add the carrot and stir fry 3 minutes more, add the broccoli and fry again 2 minutes. Now add the sugar and the soy sauce and heat 2 minutes on high heat until most of the liquid has evaporated. Add the beef. Put the noodles on plates and spoon the meat vegetable mixture on top.
