Litchi pie Chocolate fudge cake
  • 275 GRAM WHITE FLOUR
  • 5 EGGS
  • 100 GRAM COLD BUTTER
  • 100 GRAM SUGAR
  • 250 GRAM LITCHIS, peeled without stones
  • 1 CUP MILK
  • 250 GRAM WHITE FLOUR
  • 2 EGGS
  • 60 GRAM SOFT BUTTER
  • 150 GRAM SUGAR
  • 150 GRAM CHOCOLATE
  • 3/4 CUP YOGURT
  • 1 TBSP BAKING SODA

Make a dough out of butter, 1 egg yolk, 200 gram flour and 50 gram sugar. Put the dough in the fridge for one hour; then cover the bottom and sides of an oven dish with it, spread the litchis over the dough. Beat 4 egg whites until fluffy. Mix the egg yolks with the remaining 75 gram flour, 50 gr sugar and milk. Stir in the whites and poor the mixture over the litchis. Bake in the oven, 50 minutes at 175 degrees Celsius.

This pie can be prepared with all sorts of fruit like mango's, strawberries, pears.

Melt 100 gram chocolate and chop the other 50 gram in morsels. Beat the soft butter with the sugar a few minutes, add the eggs and beat a few minutes more. Stir in the yogurt, and after that the flour, baking soda and melted chocolate. At last stir in the chocolate morsels. Put the batter in a form (or small forms) and bake 40 minutes at 170 degrees in the oven (a little shorter if you make small cakes).
