Raisin bar Raisin cake
  • 125 GRAM FLOUR
  • 100 GRAM BUTTER, melted
  • 1 EGG
  • 1 TSP BAKING SODA
  • 150 GRAM BROWN SUGAR
  • 100 GRAM RAISINS
  • 1 TSP CINNAMON
  • 1 TSP GRATED GINGER
  • 100 GRAM ICING SUGAR
  • 1/4 CUP LEMON JUICE
  • 200 GRAM BUTTER
  • 150 GRAM BROWN SUGAR
  • 250 GRAM FLOUR
  • 1 TSP BAKING POWDER
  • 100 GRAM RAISINS
  • 1 APPLE, grated
  • 1 TSP GINGER POWDER
  • 1 TSP CINNAMON
  • 1 TBSP GRATED LEMON RIND
  • 125 GRAM FLOUR

Mix the butter with the sugar for 5 minutes, add the egg and mix three minutes more. Add baking soda, flour, raisins, cinnamon and ginger and stir well. Put in an over dish and bake 20 minutes at 180 degrees Celsius. Make icing with the icing sugar and lemon juice and brush this on top.

Mix the butter with sugar for 5 minutes, add the eggs, ginger and cinnamon and beat 5 minutes more. Add rest of ingredients and put in cake form; bake 25 minutes at 170 degrees and 45 minutes more at 140 degrees Celsius. Serve with warm custard sauce.
