Wineberry jam

  • 1 OZ GIN
  • 1 OZ COINTREAU
  • 1 OZ LEMON JUICE
  • 1/2 TBSP POWDERED SUGAR
 
  • 500 GRAM WINEBERRIES
  • 1 APPLE, peeled and cut in small pieces
  • 500 GRAM SUGAR
  • 2 TBSP COINTREAU

Mix the sugar with the lemon juice. Add Cointreau and gin and shake well.

Add 5 tablespoons water to the wineberries, the apple pieces and the sugar and bring this to the boil. When the mixture becomes more liquid, increase the heat and cook for 10 minutes. Add the Cointreau and put the jam in clean glass jars.
