Red currant jam

 

Tom Collins

  • 2 OZ GIN
  • 1 OZ LEMON JUICE
  • 1 TSP POWDERED SUGAR
  • 3 OZ SODA WATER
  • STRIP OF LEMON PEEL

Add 3 tablespoons water and sugar to the fruits and bring to the boil. Cook on medium high heat for 20 minutes, stir all the time. Put the jam in clean glass jars.

Mix gin, lemon juice and sugar and shake well. pour this into a glass, top off with soda water and decorate with a piece of lemon peel.

 

There are different stories about the background of the name of this cocktail. According to some, it is from "Old Tom", a special kind of gin, while others say that Tom Collins invented this drink. Even here there are different stories. He was either a bartender in 1923 in New York, or in the 19th century in New Jersey.
