Cheese muffins

 

Mandazi

  • 50 GRAM BUTTER, melted
  • 1 EGG
  • 200 GRAM SELF RAISING FLOUR
  • 3/4 CUP YOGURT
  • HANDFUL THYME, cut
  • 1 TBSP CUMIN SEED
  • 100 GRAM GRUYERE, in small cubes
 
  • 5 CARDAMOM PODS, use inside black seeds
  • 250 GRAM SELF RAISING FLOUR
  • 1 EGG
  • 1/4 CUP MILK
  • 1 TBSP SUGAR
  • 1 TBSP OIL

Mix all ingredients well, except the cumin seed. Pour the batter into greased muffin molds and sprinkle with cumin seed. Bake them 25 minutes at 180 degrees Celsius.

Knead all ingredients well together and allow this dough to rest for 15 minutes. Roll it out and cut circles with the help of a glass. Deep fry these until golden brown at 180 degrees Celsius.

Tanzanians eat a lot of mandazi. 8 August is  "Farmers' Day" in Tanzania. In Swahili it is Nane Nane (meaning 8/8). "Peasant Day" or "Sabe Sabe" (7/7) used to be on 7 July, but now they are united.
