Caraway seed bread

 

Onion bread

  • 250 GRAM WHITE FLOUR
  • 200 GRAM RYE FLOUR
  • 50 GRAM SEMOLINA
  • 1 TSP SALT
  • 1 TSP YEAST
  • 1 TSP BAKING POWDER
  • 1 TSP CARAWAY SEEDS
  • 1 HANDFUL SAGE, cut
  • 1 CUP MILK
 
  • 500 GRAM SELF RAISING FLOUR
  • 1 TSP SALT
  • 1 CUP BEER
  • 2 ONIONS, sliced
  • 100 GRAM BACON, cubed
  • 1 TBSP GREEN ANISEED

Mix all ingredients and knead for 10 minutes. Allow the dough to rise one hour and shape it into a bread. Make 4 or 5 cuts in the top with a knife. Let the bread rise another hour and bake it 30 minutes at 200 degrees Celsius.

Stir fry the bacon 5 minutes, add the onions and fry 5 minutes more. Add the flour, salt and beer and mix well. Put the batter in a greased loaf pan and sprinkle the bread with aniseed. Bake 40 minutes at 180 degrees Celsius.
