Mango chutney dressing

 

Ginger beurre blanc

  • 4 TBSP MANGO CHUTNEY
  • 2 EGG YOLKS
  • 1 TBSP MUSTARD
  • 1 DECILITER RED WINE
  • 2 DECILITER OLIVE OIL
 
  • 1/2 ONION, chopped
  • 1 DECILITER WHITE WINE
  • 1/2 DECILITER VINEGAR
  • 1/4 CUP GINGER SYRUP
  • 80 GRAM BUTTER, cold in cubes

Mix the mango chutney, the egg yolks, the mustard and the red wine, add salt and pepper. Mix, using an electric mixer. While mixing, very slowly add the olive oil.

Mix the onion, the ginger syrup, the wine and the vinegar and boil until the liquid is reduced to a syrup. Beat in the cubes of butter one by one, using a mixer.
