Bubble and squeak

- 6 POTATOES, peeled and cooked
- 150 GRAM MILK
- 250 GRAM CABBAGE, shredded
and cooked
- 150 GRAM CHEESE, grated
- 1/2 BUNCH OF BASIL LEAVES, chopped
- 1/2 TSP NUTMEG
- 1 EGG
- 4 TBSP FLOUR

- 6 POTATOES, peeled and cooked
- 100 GRAM MILK, hot
- 4 EGGS
- 250 GRAM CHEESE
- 50 GRAM BUTTER
- 100 GRAM SALAMI, in cubes
- 3 TBSP BREADCRUMBS

Heat the milk and mash the potatoes with
the hot milk, add salt and pepper to taste. Mix in all the other ingredients
except the flour. Make 8 patties out of this mixture and put them in
the fridge for an hour. Roll the patties through the flour and fry them
3 minutes on each side. Bubble
and squeak a classic British
recipe. Can anybody tell me what bubbles or squeaks here?

Mash the potatoes with the milk and the
butter. Add pepper and salt to taste. Cut 150 gram cheese in cubes and
add these to the potatoes, as well as the salami. Boil 1 egg 10 minutes
and slice it. Split the remaining 3 eggs and stir in the egg yolks.
Beat the egg whites until fluffy. Stir them in as well. Put half of
the potato puree in an oven dish. Distribute the egg slices over the
puree, and spoon the rest of the puree on top. Grate the remaining cheese,
mix with the breadcrumbs and sprinkle over the puree. Bake 15 minutes
in the oven at 220 degrees Celsius.
