Banana curd (salted)

  • 500 GRAM PORK LOIN, in large cubes
  • 5 TBSP FISH SAUCE
  • 2 TBSP PALM SUGAR
  • 2 CHILI PEPPERS
  • 1 TSP FIVE SPICES POWDER
 
  • 2 BANANAS, peeled and mashed
  • 1/2 TSP SALT
  • 1 CUP YOGURT
  • 1 GREEN CHILI, chopped
  • HANDFUL GREEN CORIANDER, chopped
  • 1/2 TSP BLACK PEPPER, milled

Mix the fish sauce, palm sugar, five spices powder and chili peppers and marinate the pork one hour in this mixture. Stir fry in hot oil for 5 minutes, add the remaining marinade and heat on high heat until it has evaporated.

Bananas are one of the most consumed fruits in the world, if not the most. They are popular in tropical countries as well as in Europe and the USA. Which is understandable, because it is such a convenient fruit: easy to peel, no pits, no problems, no chewing needed (almost). Bananas contain a lot of potassium.
